Botanical Description

Brassica rapa L. subsp. chinensis (L.) Hanelt is a non-heading leafy vegetable in the family Brassicaceae, belonging to the extraordinarily diverse species Brassica rapa that also includes turnip, napa cabbage, field mustard, and canola. Bok choy (also spelled pak choi, from Cantonese: white vegetable) is distinguished by its growth form: a loose rosette of large, spoon-shaped or ovate leaves with prominent, thickened, white to pale green petioles (leaf stems) that do not form a central head, instead remaining in an open rosette arrangement.1

Brassica rapa subsp. chinensis was developed from wild field mustard (B. rapa) likely in China, where it has been a primary vegetable crop for over a millennium and a half. It spread throughout East and Southeast Asia through trade and migration, and became globally available through Chinese diaspora communities and the expansion of Asian cuisine worldwide during the 20th century.3 Bok choy is grown commercially in California, New Jersey, and Florida for the North American market, and is increasingly grown by small farms and home gardeners across the temperate zones.

In Northern New England, bok choy is an excellent cool-season crop. It thrives in the cool spring and fall temperatures characteristic of Vermont, New Hampshire, and Maine, growing quickly (30–45 days to baby size, 50–70 days to full size) and tolerating light frosts. Spring planting in April–May yields harvests before summer heat triggers bolting; fall planting in late July–August produces the finest quality plants, as cooling temperatures prevent bolting and can extend harvest through October. Bok choy does not overwinter reliably north of USDA zone 7 without protection.4
